Tucked away on a bluff on Little Sodus Bay, the Fly by Night Cookie Company is part sweets-lover fantasy, part miniature museum — a fanciful bakery located on the shores of Lake Ontario in Fair Haven, New York. 

The one-of-a-kind bakeshop boasts a colorful proprietor and mouthwatering sweets, from pies, breads and pastries to the specialty of the house — cookies — in more than 50 varieties. Now, smitten fans can take home more than a sweet sampling when they sign up for a half-day kitchen shadowing session ($75 per person) with Head Cookie, Bonnie Bridson.  

For those with less time or ambition, a shorter visit is a delightful stop along the Great Lakes Seaway Trail. On the expansive porch, you can enjoy a cup of tea and dessert before stepping into the tiny in-house retail shop and miniature museum — “The Hamlet of Minimally” — to load up a box of sweet treats for the road. Cookies cost $10 per dozen; shipping is available.

Make sure to try the fig cookies, Bridson’s inspiration for the business, the nut-studded chocolate “Buried Treasures” and fresh fruit-filled “Buntings.”

Before you go, also take some time to admire the many delights for the eyes. Elfin shoes and other amusing props are courtesy of Bridson’s daughter, a costume designer, while the whimsical hand-carved porch was created by her son, a local artisan. Both operate shops at the seasonal Renaissance Festival in nearby Sterling. A block over, the historic Pleasant Beach Hotel makes a cozy base camp for exploring the area.
